JOB DESCRIPTION

JOB TITLE: Demi Chef

COMPANY: MH Bland & Co Ltd

DEPARTMENT: The Cable Car - Mons Calpe Suite

REPORTS TO: Head Chef

 

PURPOSE

Station Chef.  Assist the team of chefs with different tasks in the kitchen.

 

RESPONSIBILITIES

  • Prepare, cook, and present high quality dishes within your station, specifically the preparation of sandwiches, baguettes, other snacks and salads
  • Assist with the management of health and safety
  • Assist with the management of food hygiene practices
  • Maintain full knowledge of all menu items, daily features, and promotions
  • Prepare ingredients as required
  • Train junior members of the kitchen
  • Monitor portion and waste control
  • Contribute towards creating menu items, recipes and developing dishes, including snack menus
  • Maintain kitchen and food safety standards
  • Ensure the consistency in the preparation of all food items
  • Ensure the highest level of food, service and standards are always provided to our customers
  • Ensure all food preparation/distribution is delivered on time and of the highest quality and standard
  • Ensure proper equipment maintenance and operations
  • Ensure there are adequate supplies at your cooking station
  • Ensure the cleanliness and maintenance of all work areas, utensils, and equipment
  • Required to assist with cooking, preparation, and plating when Chef de Partie is absent.
  • Liaise with the Bottom Station to ensure the efficient delivery of supplies to the Top Station

In addition to the above, the jobholder will be required to perform other duties which may be assigned by the company from time to time.

In carrying out all the above, the job holder will at all times adhere to ISO9001 objectives and will comply with all departmental and company requirements, procedures and policies as stated in the Quality Manuals. A clear understanding of the Quality Manuals and Work Instructions with respect to HEALTH & SAFETY is essential. At all times, the job holder should operate in the interests of the company its customers (internal or external).

 

REQUIREMENTS:

  • MUST have a minimum of 5 years’ work experience within a busy and exclusive restaurant
  • MUST have previous experience as a Demi Chef
  • MUST be creative and innovative
  • MUST be assertive, decisive, and able to take immediate action when necessary
  • MUST have a genuine passion for food
  • Knowledge of a variety of cuisines
  • Knowledge and ability to run a section
  • Significant experience in food & beverage service
  • Strong decision-making and problem-solving skills
  • Strong leadership qualities
  • Strong communication skills (oral & written)
  • Strong negotiation and influencing skills
  • Conceptional thinker with exceptional organisational and conflict management skills.
  • Skilled and experienced in managing and training staff
  • Excellent time management skills
  • Excellent multi-tasking skills
  • Excellent knowledge of various cooking methods, ingredients, equipment, and processes
